When we were having our home remodeled, we decided to add a wood-fired oven to one of the out-buildings along with a bar and outdoor kitchen. We looked at several different manufacturers and came to the conclusion that Mugnaini was the one. We noticed that many of the restaurants in the area were using these ovens and figured that there must be a really good reason for this. During the remodel, we were so happy when their headquarters decided to move to where we lived. We can now go and visit them any time, buy supplies, and just say hi to our friends. We purchased a "Prima 120" kit, which is basically a full-sized commercial unit designed for residential use. Our masons built it, and we had another contractor design and wrap the enclosure with patina'd steel. The final result is amazing.

We've made hundreds of pizzas in this oven. We've made many other dishes as well - paella, chicken, steaks, roasts, bread, etc. Everything comes out amazing! Our guests are completely blown away and always comment that it's some of the best food they've ever had. Typically we fire the oven, and make pizzas first. Then we let the temperature fall a bit and cook other things. It's unbelievable how much residual heat there is the next morning and the entire next day allowing us to cook breakfast and bread.

We can't recommend Mugnaini enough. The oven is simply the best. The people are fantastic and have become personal friends. Buy one and see what we mean!

The ovens are great. We cook in ours whenever the weather is nice enough to stand outside. Ours was not properly installed by the previous owner, but Mugnaini was able to correct the problems. The service is good and the people are nice. My wife and I have both attended the classes and they are a great way to get familiar with how to use the oven.

Have had my Medio over 20 years now. Use it all four season for just about everything. Recently needed a new door- instant response from the team, personal service. What's better than that- aside from a perfect pizza. I don't think you can improve on this oven. Very basic, but one you work it out, you find you simply can't reproduce the results any other way. It does take time to get to temp, but what you find is you use it more as time goes on since the results are so good. My latest trick? Get a Lodge cast iron griddle. Heat up for a good 30 min with the oven at temp- no oil needed. Well seasoned side of salmon skin side down (some will stick off the end). Pop back in and cook till nice and golden on top. Yes, it might catch fire if you put too close to the flame (was still good). Skin will never stick and you will never have better salmon.
